E-Z Burgers with Balsamic Caramelized Onions

Burger patties go from frozen to fantastic in less than 30 minutes with balsamic caramelized onions.

Ingredients (serves 4)
4 frozen ground beef patties (6-8 oz)
1 tsp vomFASS Smoky BBQ Extra Virgin Olive Oil 
Kosher salt and freshly ground black pepper
1 large, sweet onion, sliced 
⅓ cup vomFASS Aceto Balsamico Maletti
⅓ cup water
1 tsp Dijon mustard
4 hamburger buns of choice

Directions
Hint: Start the onions before the patties. as the patties only need about 15 minutes including time to heat the skillet.
In another sautée pan, add the onion, season lightly with salt and pepper, and cover the pan; cook for 2 minutes. 
Uncover, add a splash of water, scrape up any browned bits from the bottom of the pan. 
Cover, and continue to cook, stirring often, until the onions are soft and beginning to color- about 10 minutes.*
Add the vinegar, water, and mustard. 
Continue to simmer, uncovered, until the liquid has thickened and most of it has been absorbed- 2 to 4 minutes. Transfer to a small bowl and let cool.
While the onions are beginning their 10 minute cook(*), take a frying pan or cast-iron skillet and put it on medium-high heat.
Add a little bit of oil to the pan.
When the pan is hot, put on your frozen patties. Season them with plenty of Kosher salt and leave them alone for a few minutes.
When you start to see the juices come out of the top of the burger, and it is no longer stuck to the pan, give it a flip (about 5 minutes).
Season the other side with salt and let it cook for another couple of minutes (3 for medium, 5 for well-done.)

Either dress your burger with a bun and condiments or use it as a topper to a lovely green salad with cherry tomatoes, dressed with a little vomFASS Extra Virgin Olive Oil and a little Maletti. 
Option: When there is about a minute left to cook the perfect juicy burger, add a slice of cheese and cover the pan. The cheese will begin to melt perfectly.
