Cucumber Martini

A cocktail 2-for-1, sophisticated martini or casual afternoon spritzer - you decide! 

Ingredients (makes 2)
CUCUMBER INFUSED VODKA
1 large hothouse cucumber
1 750ml bottle vomFASS Premium Vodka
CUCUMBER MARTINI (serves 2)
5 ounces cucumber vodka
¾ ounce lime juice
1 tablespoon agave nectar or simple syrup
2 thin cucumber slices (optional)
CUCUMBER SPRITZER (serves 2)
5 ounces cucumber vodka
¾ ounce lime juice
1 tablespoon agave nectar or simple syrup
4 ounces club soda
2 lime wedges 

Directions
CUCUMBER INFUSED VODKA: Remove skin and seeds (the peel and seeds may cause bitterness) from cucumber and roughly chop.*

Add to a large glass jar with vodka. Refrigerate for 5-7 days, testing for desired level of cucumber flavor every few days. Strain vodka and store in the refrigerator.
Yields roughly 3 cups vodka.

* You can speed up this process by blending the prepared cucumber with the vodka and then straining through cheese cloth. The yield may be slightly less.
CUCUMBER MARTINI
Add vodka, lime juice, and agave nectar to a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into two martini or coupe glasses and garnish with cucumber slices.
CUCUMBER SPRITZER
Add vodka, lime juice, and agave nectar to a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into two tumbler glasses filled with ice. Top with 2 ounces each club soda. Garnish with lime wedges.
